The crew consist of three experts born in the backwaters area, carriers of an ancient tradition of hospitality that equates the guests with divinity. A typical meal may start with “kootu”, lentils, gourd, with cracked pepper and mustard seeds, garnished with fresh coconut shreds, followed by grilled Karimeen fish, caught in the backwaters, marinated with chillies, ginger and lime.
