Since 2014, the Borghi dell'Eremo project has transformed dozens of acres of abandoned countryside into a thriving agricultural estate. On about 50 of the total 500 hectares, the property has adopted organic and sustainable methods to bring the land back to productivity. Careful management of the agricultural fields has enabled the development of in-house production of vegetables, fruits, saffron, honey and herbs for use in the estate's restaurants, for tasting and for direct sale to customers.
Part of the fields is dedicated to growing wheat to feed Chianinas, which graze freely in the meadows. In the Borgo di Corvignano area, nearly 2 hectares of Umbrian vines have been planted near the pond with the baby goats and the chicken coop. All agricultural production is certified organic, ensuring quality and respect for the environment.
The agricultural revival also includes the 1,000 olive trees, mainly of the Moraiolo and Leccino cultivars, that had been shrouded by brambles or almost swallowed by the forest. Their recovery has enabled the production of an organic extra virgin olive oil, a source of pride and satisfaction for I Borghi dell'Eremo. This project represents a concrete commitment to sustainability and enhancement of the territory.
